How to Properly Care for Your Handcrafted Wooden Cutting Board

Protecting Your Heirloom Investment

Purchasing a solid Sapele cutting board from The Wood Chef is an investment in your kitchen’s hygiene, performance, and aesthetic. Unlike cheap plastic or glued bamboo boards that you eventually throw away, our solid wood pieces are designed to last a lifetime. However, wood is a natural, porous material that requires a modicum of care to maintain its beauty and structural integrity. Fortunately, caring for your heirloom board is a simple, satisfying process that will ensure it serves your family for generations.

The Golden Rule: Never Use the Dishwasher

Let’s start with the most critical rule: never, under any circumstances, put your wooden cutting board in the dishwasher. The extreme heat, prolonged exposure to water, and harsh chemical detergents will strip the natural oils from the wood, causing it to dry out rapidly and severely warp. Always hand-wash your board.

Proper Cleaning After Use

After chopping vegetables or slicing bread, simply wipe the board down with a damp cloth. For heavier use, such as preparing raw meat, wash the board in the sink with warm water and a mild dish soap. Do not submerge the board or let it soak in standing water. Once washed, immediately dry it thoroughly with a clean towel. Crucially, store the board upright on its edge or in a rack to allow air to circulate evenly around all sides, preventing moisture from becoming trapped underneath.

The Importance of Hydration

Wood is much like our skin; it needs to be moisturized to prevent cracking. Over time, washing will slowly deplete the board's protective finish. To keep the Sapele fibers healthy and resilient, you must periodically re-condition the board. You will know it is time when the wood begins to look dry or lightens in color, or when water stops beading on the surface.

Using the Right Conditioner

Do not use cooking oils like olive or vegetable oil, as these will eventually go rancid and leave a sticky, foul-smelling residue. We also strongly advise against using petroleum-based mineral oils. Instead, use a 100% natural conditioner. Our boards arrive finished with a blend of organic MCT oil and raw beeswax. We recommend using a similar natural paste to maintain the board, ensuring zero synthetic chemicals touch your food.

The Application Process

Ensure your board is completely clean and dry. Apply a generous layer of the conditioning wax/oil blend to all sides of the board using a soft cloth. Let it soak into the wood for at least 20-30 minutes, or ideally overnight. Once it has absorbed, take a clean microfiber cloth and buff off the excess, leaving a smooth, water-resistant sheen. With this simple routine, your solid Sapele board will remain a stunning, functional centerpiece in your kitchen for decades.
