The Mineral Oil Scam (And Why I Put Coconut Oil and Beeswax on My Boards Instead)

Here is a weird contradiction I see all the time:

Someone will go out of their way to buy grass-fed ribeyes, pasture-raised eggs, and organic vegetables. They read the ingredient deck on every single item in their pantry. They care about what goes into their body and their family's bodies.

Then they bring that food home, lay it down on a wooden cutting board, and slice it up on top of a surface soaked in petroleum.

Most people don't realize that's what they’re doing. But if you’ve ever bought a bottle of generic "cutting board oil" or "butcher block conditioner" off Amazon or at a hardware store, take a look at the bottle. Turn it around and read the fine print:

100% Food Grade Mineral Oil.

Sounds harmless enough. "Food grade." But mineral oil isn't a food. It doesn't come from a plant, a tree, or an animal. Mineral oil is a clear, odorless liquid by-product of refining crude oil into gasoline.

The industry calls it "food grade" because you can ingest small quantities without an immediate trip to poison control (in higher doses, it's sold as an industrial laxative). But that doesn't mean I want it leaching into my ribeye, seasoning my sourdough, or sitting on the handcrafted wood tools I spend hours shaping in my shop.

Years ago, when I started building solid hardwood cutting boards and taco holders, I decided I wasn't going to finish heirloom-grade wood with refinery runoff. But you can’t just grab whatever cooking oil is sitting in your pantry, either.

Here is the actual science of why typical oils fail on wood, why I spent months dialing in a two-ingredient board butter, and how to apply it to keep your boards alive for decades.


Why Kitchen Oils Go Bad (And Why Mineral Oil Stuck Around)

To understand why a proper board butter matters, you have to understand what happens inside wood grain.

Wood is essentially a dense bundle of microscopic straw-like tubes. When a tree is alive, those tubes pull water and nutrients from the roots up to the canopy. When you mill and dry the lumber, those tubes empty out. If you leave dry wood unsealed on your kitchen counter, it will act like a sponge:

  • It absorbs raw meat juices, water, and acidic liquids.
  • It dries out rapidly when washed, leading to shrinking, cracking, and warping.
  • Knife marks open up micro-crevices that trap food debris.

The obvious thought is: "Why not just rub olive oil or canola oil into it?"

Do not do that.

Vegetable oils, olive oils, and canola oils contain polyunsaturated and monounsaturated fatty acids with double bonds in their molecular structure. When exposed to oxygen and light, those fats break down and oxidize. In plain English: they go rancid. Within a few weeks, that olive oil deep inside your board starts smelling like stale, sour, sticky fryer grease. And once rancid oil is locked four millimeters deep in hardwood pores, good luck getting the smell out.

Because standard culinary oils go rancid, the woodworking and kitchenware industry took the cheap, lazy way out 50 years ago: mineral oil. Mineral oil is a petroleum hydrocarbon that cannot oxidize or spoil. It’s dirt cheap to bottle, shelf-stable forever, and gives dry wood a quick dark sheen.

Cheap? Yes. Safe to bathe your daily food on? That’s where I draw the line.


The Real Fix: Beeswax + Fractionated MCT Coconut Oil

When I set out to formulate The Wood Chef Board Butter, the rules were strict:

  1. 100% natural, whole ingredients you could eat without thinking twice.
  2. Zero rancidity risk — no spoiled odors, no sticky gummy buildup.
  3. Deep cellular penetration combined with surface moisture protection.

That led directly to a precise ratio of two ingredients: Beeswax and Fractionated Coconut (MCT) Oil.

1. Why MCT Oil?

Standard unrefined coconut oil is solid at room temperature and contains long-chain fatty acids that can still degrade over long periods.

Fractionated coconut oil (MCT — medium-chain triglycerides) has all the long-chain fats removed. What remains is a pure, ultra-stable, completely saturated medium-chain lipid. Because it is fully saturated, it cannot oxidize or go rancid. Ever.

More importantly, MCT oil has a very low molecular viscosity. It flows deep into the capillary structure of dense hardwoods like Sapele, Walnut, and Maple, hydrating the wood fibers from the inside out and preventing the board from becoming brittle.

2. Why Beeswax?

MCT oil hydrates deep, but liquid oil on its own doesn't create a barrier. That’s where beeswax comes in.

Beeswax is a natural wax synthesized by honeybees. It has natural antimicrobial properties and melts near body temperature. When blended into the butter, the beeswax stays in the upper layer of the wood grain. It forms a microscopic, water-repellent seal across the surface that fills in light knife scratches and keeps liquid from penetrating into the fibers.

The result is a dense, creamy paste that smells faintly of natural honey, leaves zero petroleum residue, and gives the wood a deep, rich, satin luster.


The Water Test: How You Know It’s Working

When your board is properly buttered, water doesn't soak in or darken the wood. It beads up into tight, high-tension droplets that roll right off when you tilt the board.

When you see water stop beading and start soaking into the wood fiber, you know it's time for a quick maintenance coat.


How to Apply Board Butter (The No-Nonsense Routine)

You don't need fancy tools or synthetic pads. Conditioning your woodware is a straightforward ritual you do once a month or whenever the wood looks pale and thirsty.

Here is the exact method I use in the shop and on my own kitchen boards:

Step 1: Clean and Dry Completely

Never apply butter or oil to a wet or even slightly damp board. If you lock moisture under a layer of beeswax, you create a breeding ground for mildew.

  • Hand wash your board with warm water and mild dish soap.
  • Wipe it down with a cotton towel and let it dry vertically on edge for at least 4 to 6 hours (or overnight) so air circulates around both faces.

Step 2: Work It in Circles

  • Scoop a nickel-to-quarter-sized amount of Board Butter onto the surface. A little goes a long way.
  • Use a clean cotton rag or your bare hands. The natural body heat from your hands warms the beeswax, softening it so it melts directly into the grain.
  • Work the butter in circular motions across the entire surface, making sure to coat the top, bottom, and especially the end-grain edges (which drink up more oil than the face grain).

Step 3: Let It Penetrate

  • Leave the board alone for 20 to 30 minutes. If the board is brand new or hasn't been conditioned in months, leave it overnight.
  • Give the wood time to absorb the MCT oil into its pores and allow the wax to settle.

Step 4: Use It

  • If you want a pristine satin display finish, take a dry cotton cloth and buff off any excess along the grain.
  • But if this is your everyday kitchen workhorse, don't waste your time buffing it. Just leave it overnight and start cutting on it like normal the next morning.
  • MCT oil and beeswax are completely clean, food-safe fats. A little extra butter on the surface won't hurt anything—in fact, both are genuinely healthy compared to the petroleum runoff standard boards are soaked in.

What Else Can You Use It On?

This isn't just for cutting boards. I use our Board Butter on every wooden food-contact tool in our house:

A well-made solid hardwood tool will outlive you if you treat it with respect. It doesn't need complicated maintenance, and it definitely doesn't need petrochemicals.

A couple tablespoons of coconut MCT oil and beeswax every month or two is all it takes to keep your boards looking and performing the way they were built to.
