It is the most common and devastating mistake in the kitchen: loading a beautiful wooden cutting board into the dishwasher. The extreme heat, harsh detergents, and prolonged water exposure combine to create a hostile environment that will instantly destroy almost any wooden kitchen product. But what actually happens, and is the board ruined forever?
The Anatomy of Dishwasher Damage

Wood acts like a sponge. In a dishwasher, the wood fibers rapidly absorb massive amounts of boiling water, causing them to expand violently. During the drying cycle, the board is baked, causing the fibers to shrink just as rapidly. This aggressive expansion and contraction rips the wood fibers apart, leading to severe warping and massive cracks. If the board was made with glued strips, the heat melts the glue, causing the board to literally fall to pieces.
How to Salvage a Damaged Board
If your board is glued together and has fallen apart, it is unfixable. However, if you own a single, solid piece board (like ours) that has simply dried out and slightly warped, there is hope. Soak the concave (cupped) side with water and place it face down on a flat surface overnight to force it to warp back into shape. Once flat, let it dry completely, sand down the raised grain with 220-grit sandpaper, and flood it with mineral oil.
